Fishy Business - Tuna Recipes

A tin of tuna fish is always a useful standby to keep in the kitchen store cupboard. Other than being used in sandwiches and salads, it can be made to stretch a long, long way, serving up to six people with a decent, healthy, simple-to-prepare meal. Some of my all-time favorites are Tuna Salad, Tuna pie, Tuna Pizza and another, Tuna flan, is excellent served either hot or cold.

Seafood Gift Certificates

Tuna Salad

Ingredients 2 cans tuna fish 1 finely chopped tomato 1 finely chopped cucumber 1 finely grated onion 100g cottage cheese (100g of mayonnaise can be added in place of the cottage cheese)

Method First drain and then flake the tuna. Mix in the remaining ingredients. Serve by itself or sandwiched between slices of toasted bread.

Offer pickle slices and carrot sticks on the side.

Tuna Pie Serves Four

Ingredients 1kg potatoes boiled and mashed with a little milk and butter and salt to taste 1 medium-sized onion, chopped and lightly fried 1 medium-sized tin of tuna fish, preferable in oil 200 g cheddar cheese, grated 1 tbsp French mustard 1 tbsp crushed garlic 1 large tomato, sliced Freshly grated black pepper A little paprika powder A little dried tarragon or fresh parsley to garnish

Method

In a large mixing bowl combine mashed potatoes, onion, Tuna fish in oil, half of the cheese, French mustard, garlic and a little black pepper. After mixing thoroughly, transfer it into an oven proof casserole dish. Sprinkle the remaining cheese on top, then the tomato and a little paprika. Finally, garnish either with terragon or chopped parsley. Either finish by placing under a hot grill until the top browns or likewise in a moderate oven. Serve with a seasonal vegetable or a green salad.

Quick Tuna Pizza

Ingredients 40 gm margarine 175 gm self-raising flour 1tsp salt 3-4 tbsp milk 1 medium-sized onion, peeled and sliced 200gm canned tuna fish, drained and washed 1tsp oregano 100gm cheddar cheese, finely grated 2 tomatoes sliced

Method For the scone dough base, rub fat into the flour and salt. Blend together with milk. Roll lightly to a (8-inch) round and place on a greased baking tray. Heat margarine and fry onion until soft. Spread over scone base. Top onions with tuna fish. Mix herbs and cheese together and sprinkle over the fish. Top with tomato slices and bake in a hot oven for 15 to 20 minutes. Serve hot in wedges.

Tuna Flan Serves six

Ingredients 100g butter 200g flour ½ litre milk 1 medium-size tin of tuna fish in brine, drained and flaked 2 tbsp finely chopped spring onions 1 dessert-spoon crushed garlic 2 eggs, beaten 100g grated cheddar cheese Salt and pepper to taste 100g tin of sweetcorn, drained

Method

Rub the butter into the flour until the mixture resembles fine breadcrumbs. Add sufficient milk, little at a time to mix into a soft dough. Roll this out on a floured surface and use it to line a flan dish, approximately 12 inches by 4 inches in size. Cook in a hot oven, 200C or 400F for 10 minutes.

Meanwhile, mix together the remaining milk, tuna fish, spring onions, eggs, garlic, cheese, sweetcorn and salt and pepper to taste.

Pour the mixture into the flan case. Reduce the heat slightly and cook for about 30 minutes or until the flan is set. Serve hot or cold accompanied with a salad.
